Can't remember where I saw this recipe, but tried it last year, and it's fab! A great way to use up old bananas, and the alcohol adds a nice adult touch to the jam/spread. I love this on pancakes! Recipe below is enough to fill one jam jar.

  • 2 old, brown bananas
  • 140g sugar
  • 70ml water
  • 200g chocolate (I prefer dark, but milk works too)
  • 2 teaspoons amaretto or dark rum (your choice)

  1. Mash the bananas, add the sugar and water to a heavy bottomed pan and bring to the boil. Keep the pan boiling for 2 to 3 minutes until the banana mixture is beginning to get thick and syrupy.
  2. Take off the heat and leave for a few minutes. Then break the chocolate in and stir until melted. Add the amaretto and stir. (Don't be tempted to add more chocolate, or when it cools, it will set solid!)
  3. Pour into a jam jar (or if you don't have one, then a small dish) and leave to cool.

Storage tip

If in a sealed jar, will last 3 months. Opened jar, or open dish, will last 2 weeks in the fridge.

This is really easy, very quick and totally delicious. I can think of a million different uses for the spread, and a lot of fruit and chocolate combos to try as variations. I didn't have any rum, so I used advocaat, which gave a lovely rich taste to the dish.-26 Feb 2017

Recipe Summary

  • 8 ounces semisweet chocolate, chopped
  • 6 popsicle sticks or wooden skewers
  • 2 bananas, peeled and cut crosswise into thirds
  • 1/3 cup coarsely chopped salted peanuts

Place chocolate in a heatproof bowl set over (not in) a pan of gently simmering water. Stir just until melted.

Line a baking sheet with waxed paper. Insert a popsicle stick in one end of each banana piece. Dip banana, one piece at a time, in chocolate, spooning on additional chocolate to cover.

Sprinkle each banana with peanuts, and set on prepared baking sheet. Refrigerate until chocolate is firm, 20 minutes, or up to 3 days.


Chocolate Peanut Butter Swirl Banana Bread

This is not the cake to make if you are on a diet, note to self. I took one bite of this bread and and it was love. Moist banana bread, with homemade chocolate peanut butter swirled in and topped with semi sweet chocolate chips. Totally worth the extra workout in the gym after having a slice.

Banana and peanuts have always been a favorite snack of mine. For as long as i can remember I have always eaten them together. With bananas once they start to brown it is time for banana bread. Usually I would just use them to make my favorite banana bread recipe, till I saw the jar of chocolate peanut butter spread I made about a week ago. I simply cannot get enough of chocolate peanut butter and I knew it had to be added to the banana bread.

As recipes goes this chocolate peanut butter banana bread is a super simple recipe. All it takes is mixing mashed bananas and sugar together, add in sour cream. Mix in flour and bicarbonate of soda, finally sitirring in melted butter. Dollop banana bread batter with chocolate peanut butter and swirl. Sprinkle semi sweet chocolate chips over top of batter and into the oven it goes.

For a moist sweet intense banana flavour in this chocolate peanut butter swirl banana bread be sure to use extra ripe bananas.


Chocolate banana spread recipe - Recipes

Heat the oven to 400°F.  Beat the egg and water in a small bowl with a fork. 

Sprinkle the flour on the work surface.  Unfold the pastry sheet on the work surface.  Cut into 9 (about 3-inch) squares.  Brush the edges of the pastries with the egg mixture.

Place 1 teaspoon hazelnut chocolate spread in the center of each pastry.  Top each with 2 slices banana.  Fold the pastry over the filling to form a triangle.  Press the edges to seal.  Crimp the edges with a fork.  Brush the pastries with the egg mixture.  Place the pastries onto a baking sheet.

Bake for 20 minutes or until the pastries are golden brown.  Let the pastries cool on the baking sheet on a wire rack for 10 minutes.  Sprinkle with the confectioners' sugar.

To seal stuffed Puff Pastries, pinch the edges together or press with the tines of a fork, just as you’d seal a piecrust.

How to Make perfect muffins all the time?

  1. Don’t over mix the batter
  2. Let the batter remain lumpy
  3. Use a fork or spoon to mix the batter.
  4. Always make wet and dry mixture separately and mix.
  5. Start with ingredients at room temperature
  6. Batter should be stiff enough to hold a spoon upright if it seems runny, gently fold in a few extra tablespoons of flour.
  7. Fill muffin tins three-quarters full the tops are the best part, so don’t be shy with the batter.
  8. Take care not to over-bake the muffins.
  9. Allow muffins to cool in the pan at least 10 minutes before removing them, especially if they contain soft fresh fruit.
  10. Enjoy them fresh. If you must, freeze them, although I prefer to freeze the batter (without add-ins), then thaw overnight in the refrigerator and bake the muffins fresh in the morning.


Banana Bread With Chocolate Drizzle

Preheat the oven to 350 degrees. Grease a 9-by-5-inch loaf pan with cooking oil spray.

If you’ll be adding the walnuts, spread them on a baking sheet and toast in the preheated oven until fragrant and lightly browned, about 8 minutes.

Whisk together the whole-wheat flour, all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder and salt in a mixing bowl.

Whisk together the oil, yogurt, eggs and vanilla extract in a medium bowl, then whisk in the mashed bananas until well incorporated. Add to the flour mixture, stirring just until combined. Stir in the toasted walnuts, if using.

Pour the batter into the prepared pan, smoothing the surface. Bake (at 350 degrees) until a wooden skewer inserted into the center comes out clean, 50 to 55 minutes. Cool in the pan, then transfer the loaf to a plate.

While the banana bread is cooling, combine the confectioners’ sugar and the 2 teaspoons of milk in a small saucepan over low heat stir until the sugar has dissolved. Add the chocolate and cook, stirring, until melted and well incorporated, about 1 minute. If the mixture seems too thick, add another teaspoon or two of milk, Remove from the heat.

Drizzle or spoon the chocolate mixture over the top of the banana bread. Allow the chocolate to cool and set before slicing and serving.


Chocolate Chunk Banana Bread Enriched with Bakery-Style Indulgence

When a quick bread looks this decadent, you might be tempted to grab a thick slice and dig in. I wouldn’t stop you. But it’s also a wonderful recipe to enjoy with various garnishes.
