10 minutes are all you need to prep a lively Greek-inspired baked chicken dish with peppers, parsley and feta cheese.


Prepare using 6 skinless chicken thighs. Bake 40 to 45 min. or until done.

Omit red peppers. Prepare as directed, sprinkling chicken with 1/2 teaspoons chopped fresh oregano along with the black pepper and using ATHENOS Traditional Crumbled Feta Cheese.

The amazing flavor of this easy feta chicken bake shines through and I am sure this is going to be a family favorite.

This healthy all-in-one dish means it's ideal for taking to all those summer potlucks and barbecues too. Plus, clean-up is a breeze, and you don't have to worry about dirtying the entire kitchen.

Remember this baked feta recipe inspired by our Greek honeymoon? Our obsession with the glory that is warm feta hasn’t lessened. Today I have a SUPER easy Baked Feta & Chicken recipe for you.

If you have 10 minutes, you have time to make this Greek-inspired dish. The ingredient list is short (shocking, right?), but it doesn’t skimp on flavor.

Because feta is such a rich, salty cheese, you don’t have to use a ton of it. A small amount over lean, low-fat chicken breasts adds a big punch of flavor without adding a ton of calories and fat.

I also love how the oregano and lemon juice compliments the cheese. It lightens up the flavor and adds to the Mediterranean feel. Perfect for summer!

Baked Feta Pasta

This is the story about another viral TikTok trend that I kinda sorted wanted to hate. but didn't. It's not that I didn't think the idea sounded delicious. It's just that the whole thing seemed too simple. Obviously roasting a block of feta with bursting tomatoes is going to be amazing. But is it good enough to break the internet?

My answer, begrudgingly, is yes. It's genius. But dare I say, not perfect? Below are my thoughts.

  1. You don't need to change the oven temperature. The OG recipe calls for baking the feta with the tomatoes at 400° for 30 minutes then kicking up for the last 10 minutes. After 30 minutes in the oven, I found my feta well on its way to a pretty shade of golden on top. To avoid burning additions like garlic and herbs (see my next note), I think it's best to keep the temperature steady.
  2. You can play add more than just tomatoes and feta. Quartered shallots will get nice and jammy, and smashed garlic will infuse the olive oil. Like spice? Throw in a ton of crushed red pepper flakes. Got thyme? Add a couple sprigs for an earthy touch.
  3. Adding pasta water helps. A scoop of pasta water will help stretch your sauce to coat your pasta more smoothly and generously.

Easy Greek Chicken Bake is a low carb, grain free, paleo, one pan wonder meal! This is a super easy meal and packs awesome, Greek-inspired flavors. Don’t you just love it when you can dump all the ingredients in a pan and pop it in the oven and walk away.

My family was really impressed with this dish. My Hubby even called dibs on the leftovers, and he is not even a chicken fan. Must be the bacon, lol.

Even though one of my kiddos does not like olives, he still ate it and just avoided the olives. I had told him that I just can’t make Greek food without olives because it would be a culinary crime!

It’s a simple dish. A block of feta cheese surrounded by roasted grape tomatoes with a dash of seasonings. You can experiment with the sauce and seasonings if you want.

🔪 Instructions

  1. In a small bowl, mix the lemon juice, olive oil, oregano, salt and pepper.
  2. Pour the marinade into a large ziplock bag. Add the chicken breasts, massaging the chicken to get everything coated. Refrigerate for one to two hours.
  3. Make the Mediterranean salsa (optional).
  4. Preheat the oven, then place chicken in a baking dish, top with cheese and green onions, and place in the oven. Cook for about 30-40 minutes, until the chicken is completely cooked.
  5. If desired, serve the chicken topped with the tomato, onion, and olive mixture.

Chicken is cooked through when the internal temperature is 165 degrees. Use an instant read meat thermometer to be sure!

Depending on the size and thickness of the chicken breasts, this meal only takes about 30 - 40 minutes to cook!

The simple answer is don't over bake! 😀 Seriously though, investing in a good instant read thermometer will help you bake cook chicken confidently and never dry it out. Here's another good tip though: Tenting it under foil for 5-10 minutes after cooking will allow the juices to redistribute into the chicken which also helps.

The salsa for the Mediterranean Chicken Bake is totally optional, but I highly recommend making it! It adds a great fresh flavor to this delicious meal!

Store any leftover chicken in the refrigerator in an airtight container. I recommend storing any leftover Mediterranean salsa in a separate container.

The easiest way is to zap it in the microwave for a minute or two, until hot. You can also bake it in a covered dish at 325 degrees for about 20 minutes.

Leftovers can be frozen in a good quality airtight container for up to 3 months. Thaw in the refrigerator overnight before reheating to serve.

How to make Greek Chicken Recipe

Preheat the oven to 350F.

In a large baking sheet add the chicken, potatoes, peppers, red onions, lemon wedges, garlic, and tomatoes.
Sprinkle with oregano, paprika, salt and pepper and drizzle with olive oil.

Gently toss until well coated. Bake in the preheated oven for 25 minutes, or until chicken is cooked through and veggies are tender.

Remove from the oven and stir in crumbled feta cheese and olives. Garnish with fresh thyme and enjoy it!

What to Serve with Greek Chicken

Many sides go so well with this greek chicken bake recipe. Here are a few ideas:

  • Try some couscous, quinoa, or barley
  • More veggies like Brussel Sprouts or mushrooms
  • Some Pasta or Zoodles for a healthier option

How to store

You may store your leftover greek chicken recipe in an airtight container in the fridge for 3-4 days. It is best enjoyed cold the next day. If you plan on saving some for the next day, don&rsquot add the feta cheese until after you reheat in the microwave.


Chicken &ndash Thighs with skin were used in this recipe. Which explains the high calories per serving. A leaner and healthier option would be using skinless and boneless chicken breasts.

Potatoes &ndash You may use either sweet potatoes or regular potatoes of choice.

Cheese &ndash Feta cheese tastes best for greek style chicken recipe and we highly recommend use feta. But you may sub with other crumbly cheese like ricotta, halloumi, queso fresco, or goat cheese

  • ¼ cup extra-virgin olive oil
  • 3 tablespoons chopped fresh oregano, plus more for garnish
  • 1 tablespoon chopped fresh thyme, plus more for garnish
  • 3 cloves garlic, grated
  • ½ teaspoon ground pepper
  • ¼ teaspoon kosher salt
  • 1 ½ pounds baby red potatoes, halved or quartered if large
  • ½ cup pitted Castelvetrano olives, coarsely chopped
  • 1 ¾ pounds bone-in chicken thighs, trimmed
  • 1 lemon, cut into wedges
  • ¼ cup crumbled feta cheese

Preheat oven to 450 degrees F.

Combine oil, oregano, thyme, garlic, pepper and salt in a small bowl. Transfer 1 tablespoon of the herb mixture to a medium bowl. Add potatoes and olives and stir to coat.

Pat chicken dry with paper towels. Rub with the remaining herb mixture.

Scatter the potatoes and olives in a 9-by-13-inch baking pan.

Place the chicken on top of the potatoes and olives and tuck in lemon wedges.

Bake until the potatoes are browned and an instant-read thermometer inserted in the thickest part of a thigh without touching bone registers at least 165 degrees F, 40 to 45 minutes. Carefully squeeze the lemon wedges over the chicken.

Serve the chicken and vegetables topped with feta and more oregano and thyme, if desired.

Greek Baked Feta

One of the concepts I’ve learned in this master’s program about eating is the concept of repeated exposure: repeatedly eating a food you don’t like until your body realizes “hey, this probably won’t kill me”, and you begin to like it.
