We clean and then wash the carrots. We cut thicker slices and then place them in a tray. Sprinkle with a little olive oil and sprinkle dried thyme over them. After washing the fish well, we wipe them with an absorbent towel, season them to taste with salt and pepper and place them on top of the carrot slices. Sprinkle everything with the juice from one lemon, and cut the other lemon into small cubes that we place over the pieces of fish. Pour the glass of wine over the fish and put in the oven. From time to time we sprinkle the fish pieces with the sauce from the pan. We keep them in the oven until the fish is well done and browned. Then take the tray out of the oven, let it cool a bit and serve the fish with the carrot slices and a rice with vegetables.
